Watermelon Nice Cream Smoothie Bowl

 

So colorful. I actually bought these flowers for a shoot with my Ritual Oils, but I really should’ve figured they’d also end up in my food. And now they have. So, this watermelon smoothie bowl doesn’t have any added fluid, no coconut milk, or coconut water or anything. I figured with the high water content of watermelon mixed with the natural creaminess of the bananas I wouldn’t need any, and I didn’t. Like most smoothie bowls, this guy comes together in 5 minutes or so, minus freezing time (which you can always do beforehand) and has only two ingredients: watermelon and banana.

I froze all of these ingredients fresh because I had them on hand. Generally speaking, freezing fruit only takes between 2-3 hours, and is easier when chopped and spread out on parchment paper like above. I actually used an ice cream scooper but you can use a melon baller to get the watermelon out and keep the rind (which can also go in the freezer) to serve in. I didn’t add any sweetener, but some light agave would definitely add dimension to this or a little pinch of salt with a squeeze or lemon or lime, if you prefer it tangier.

Here’s what you’ll need:

Makes 3-4 Servings

Watermelon Nice Cream Smoothie Bowl

  • 1/2 of a personal watermelon - or about 4 cups of frozen watermelon

  • 3 bananas - frozen

  • 1/2 teaspoon of poppy seeds (optional)

  • A few flowers for decoration (optional)

Directions:

  • Blend bananas until smooth and creamy (you’ll need a high-powered blender or a food processor)

  • Add in frozen watermelon, make sure it’s seedless or you’ve picked out the seeds, and blend again until creamy.

  • Serve inside of the watermelon rind.

  • Serve immediately, or can be stored in the freezer and re-blended when ready.
